The Benefits of Composting

There are many benefits of composting, but finding recruits just simply growing out of the soil is a wonderful bonus to the other “feel good” aspects of composting. José Torres Lopez and Elimelec Hernández have been treating the rest of the CEA staff with some of their lagniappe.



José and Eli have melon, onions and tomatoes growing out of the compost and in the wetlands on CEA property. For the last staff meeting, José made a delicious smoothie along with cut fruit with lime from the papaya that had grown in the PCRF wetland. Not all were willing to try the fruit from a wetland, but those of us who did found the papaya very tasty!


This week José and Eli made xni pec, Mayan salsa picante similar to the Mexican Pico de Gallo (beak of the rooster). Xni pec means the “nose of the dog” in Mayan and is the Mayan picante made with the chile habanero, touted as the hottest pepper in the world that is edible. The habanero is called a social chile as it only burns going in.


Papaya Licuado (Smoothie)

Cut papaya into small pieces and put ½ cup of fruit for each serving into blender with water, ice and honey to taste. You might like a squeeze of lime as well. Blend and enjoy.


Xni Pec Salsa Picante (Nose of the Dog Hot Sauce)

Chop onions, tomatoes and chilies in any combination that suits your taste. Add lime juice and salt. Cilantro is optional. Serve with chips and cold beer or margaritas!!!
